The Pais de Quercus Iberian Cebo de Campo Shoulder (known locally as PALETA) is a selection obtained from the forelimbs of the Iberian pig raised on an extensive diet and fed on acorns, cereals and natural feed rich in fibre.
The elaboration is carried out with the same care and dedication as the Iberian Bellota Shoulder. The difference is that being a less fatty product it needs less time in the curing process: a minimum of eighteen months.
When sliced its colour varies between intense red and pale red. On tasting it has a sweet flavour with a soft and delicate texture on the palate.
